Summer is upon us and this time of year always reminds me of my own childhood summers. I used to love making homemade popsicles with my mom. We kept it very simple. We would pour orange juice into a white cup and before it froze entirely, we would stick in a popsicle stick. Several hours later, we had popsicles!
Those popsicles tasted so much better than store bought popsicles. The flavor lasted. I didn’t have to worry about the popsicles becoming just ice at the end. And who didn’t love enjoying a popsicle shaped like a cup?

1 pound strawberries
1/2 juiced lime
1/3 cup maple syrup
Place the strawberries, lime juice, and maple syrup into a blender. Pulse until well blended into a purée. On the Blendtec, I used the whole juice setting. Pour the purée into popsicle molds. Freeze for 4 hours or overnight.
