Lately I’m all about pesto. For me, summertime and pesto go together. It must be the fact that basil grows in such abundance. I’m always proud of my basil harvests. Anybody that knows me knows I do not have a natural green thumb. Basil is an easy herb for me to grow. It’s hearty so even when I neglect my basil, it still fights to live and thrive. If you are looking for a pesto recipe, this pesto chicken sandwich can’t be beat.
I’ve mentioned it before: pesto has so many uses. Of course, it’s amazing when paired with pasta. But don’t stop there! If you love warm crusty bread sandwiches, you will love a pesto chicken sandwich. It’s easy, delicious, and works perfectly for lunch or dinner.
The ingredients are simple. Gather your pesto, favorite bread, your favorite cheese, a rotisserie chicken, red onions, and peppers(orange, red, or yellow work perfectly). Feel free to choose other flavorful veggie toppings as well.
Follow these easy steps. Chop up the chicken and toss it in the pesto until the chicken is well coated. Drizzle the two slices of bread with olive oil (or you could smear some butter on the bread). Layer the bread with the chicken, cheese, onions and peppers. Slide the other slice of bread on top. Line a baking sheet with foil and place the sandwich in the middle of the pan.
Move the baking pan to a preheated 350 degrees oven and bake for 11-13 minutes. If you would like a browner sandwich, switch the oven to broil for a minute or two. Watch carefully-you don’t want to burn your sandwich!
Remove the sandwich from the oven and enjoy! The result is a crunchy on the outside, flavorful on the inside, yummy, melty cheesy sandwich for you to enjoy alone or with someone.

Easy to Make Pesto Chicken Sandwich
1 cup chicken, chopped
1 tbsp pesto
2 slices bread (Tuscan or sourdough work well.)
1-2 tsp olive oil
2 slices swiss cheese
1/4 cup peppers, chopped
2 tbsp red onions, chopped
- Preheat your oven to 350 degrees.
- Combine the chicken and pesto until the chicken is well coated.
- Drizzle the outside of the two slices of bread with the olive oil.
- Layer the bread with the Swiss cheese, pesto chicken, peppers, and red onions.
- Line a baking pan with foil.
- Place the sandwich on the baking pan. Bake for 11-13 minutes.
- To brown the sandwich, broil for 1-2 minutes. Watch the oven carefully to avoid burning the bread.
