It’s Meal Prep Sunday! Today I made Lime Garlic Shrimp Pasta and I will have enough for lunch every day this week. It makes a total of 10 servings, so I will also have enough for my daughter’s dinner each night. In a perfect world, she would eat it every day, but we all know that kids are never that easy, right?
Are your mornings ever extra hectic? In our house, I find that chaotic mornings are the result of not having a plan for breakfast. Sometimes my daughter needs to eat her breakfast in the car, so I like to have fruit and muffins available for her to take on the go. Sometimes she gets tired of these options, so I have been trying to create breakfast options that I can make ahead of time and freeze. This Toasted Oat French Toast works out well as a healthy option.
This is the time of year when I love to have warm, comforting foods for lunch and dinner. I find that chili, soups, and stews are one of the best options for preparing large batches that make meal prep easier. Also, I like that these dishes can be healthy and tasty at the same time.

It’s January. It’s cold. This is the time of year when our skin suffers the consequences of the weather. This is why I find that January is the perfect time to whip up several batches of whipped body butter. There are so many different recipes and combinations of ingredients to make amazing whipped body butter, and this one is very simple, but moisturizing.
I love Tex-Mex! It is probably my favorite cuisine due to the combination of cheese, meat, tortillas, and let’s not forget margaritas!!! However, let’s face it, Tex-Mex is not always flattering to our figures. That’s why I am so thankful for this Chicken Tortilla Soup! It provides all the taste without all the naughtiness.
Reading has been one of my passions for as long as I can remember. As a little girl, I always needed to have a book with me. I can vividly remember my elementary school teachers needing to tell me to put a book away during a lesson. As a 4th grade teacher, I love seeing my students trying to sneak in some reading time during class.
Happy New Year, friends! Hope you all enjoyed your celebrations! We kept our celebration pretty low-key, as usual, but that’s how we like it! My in-laws hosted and that worked out perfectly since we hosted Christmas dinner.
